The Globe artichoke is the most abundant producing artichoke. It belongs to the Sunflower family.

Artichokes require frequent irrigation during the growing season. Moisture deficiency can result in loose buds (the artichoke is actually an edible bud) of inferior quality.

Artichokes are ready for picking when heavy and compact for their size, and a bright olive green color. Both an indication that they will be moist, fleshy and delicious.

Artichokes do not mature all at the same time. They must be harvested every seven days throughout the growing season.

Artichokes aren't easy. And either is this class! See you next Artichoke Press.
